For those who are wary of contributing $$ to major organizations that have overinflated burecratic budgets and bureaucracy, here's a list of some good grassroots groups doing on-the-ground work to help those hit by Katrina that can use your help.
There's a really excellent list already together at:
www.sparkplugfoundation.org/katrinarelief.html
Also, Jessie Bidol of Bradford (near Bangor) is an African-American woman who has lived in Maine for several decades but whose family is all from the New Orleans area and were severely affected by the storm. If you know Jessie, or even if you don't, and want to help her family's recovery:
Bidol Family Katrina Recovery Fund, c/o Mary Lou Colbath, 19 Spencer St.,
Orono 04473, 866-2878
Here's some other good groups that weren't in the sparkplug foundation list as of the time of this posting:

Disaster Fund - Hurricane Relief
Support the Farm Aid Disaster Fund
The Family Farm Disaster Fund was established by FARM AID to help farm families survive weather-related disasters. Right now donations to the FFDF are being directed to farm families that were hurt by Hurricane Katrina. Farm Aid is helping by:
1. Providing emergency funds for families to allow them to buy food and cover family living expenses. Through churches and service agencies operating in the region, FARM AID ensures that the money goes to farm families most in need.
2. Supporting emergency hotlines which provide legal, financial and emotional counseling to struggling farmers.
3. Providing legal and financial counseling to farmers in danger of losing their farms. When farmers need help to avoid foreclosure due to losses from natural disasters, FARM AID funded groups are there to help them save their farm.
4. Sponsoring crisis prevention programs in disaster stricken states. Through workshops and public meetings, FARM AID-funded groups educate farmers about available disaster assistance in each state.
Donations to the Family Farm Disaster Fund will help FARM AID directly address the needs of farm in crisis. Please help Farm Aid help them.
Farm Aid staff members can be reached at 1-800-FARM AID (800-327-6243) from 9am to 5pm eastern time. If no one picks up your call, please leave a detailed message and someone will get back to you as soon as possible.
Please include your complete name, home mailing address and your phone number so that we can best respond to your request.
